How To Make A Pickle Cake
If you caught my Strawberry Rhubarb Sauce post terminal week, yous would take read near my very special ingredient. Well, I did it again. I made a dessert using Farmer's Garden past Vlasic pickles. Simply this time, I went with kosher dill spears, and I broiled a cake.
Aye, a block with dill pickle. You might be thinking I'm crazy, merely this bundt cake turned out and then deliciously soft and flavorful. I idea that pineapple and pickles would brand a bully combination, and they did.
Trust me.
These pickles sense of taste fabulous on their own, only why non try something new with this recipe?
I dare ya. Go ahead. Then come back here and tell me I was right. It is ok, I tin expect.
Pineapple Pickle Bundt Cake
Total time
- ½ cup oil
- ¼ cup applesauce
- one-1/ii cups sugar
- ½ cup brown saccharide
- 2 eggs
- i½ teaspoons vanilla
- 2½ cups flour
- 2 teaspoons blistering soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 8 Farmer's Garden by Vlasic Kosher Dill Spears, shredded (about ⅓ cup)
- eight ounce can crushed pineapple, drained (virtually ⅔ loving cup)
- ½ loving cup chopped pecans
- Preheat oven to 350 degrees Fahrenheit.
- Using grater, shred pickles, leaving out peel. Drain.
- Beat oil, applesauce, pickles, sugar, chocolate-brown carbohydrate, vanilla, and eggs well in large bowl.
- In split large bowl, stir together flour, blistering soda, cinnamon and salt and mix well.
- Slowly add together to sugar concoction and mix until well combined.
- Fold in pineapple and pecans.
- Cascade into greased bundt pan (or thirteen"×9" pan) and spread evenly.
- Bake for 45 to 50 minutes or until toothpick inserted in eye comes out clean. Cool for ten to fifteen minutes before inverting onto wire rack to cool completely.

I left out the skin while grating, simply because the skin was so tough. Once you drain you should be left with something that looks similar this. (If y'all squint it nearly looks like applesauce.)
I was originally planning to add together a cream cheese coat over the peak. Unfortunately, when I went to make it, I realized we were out of cream cheese.
And then instead of going with a plain glaze, I opted for some simple powdered sugar. The cake doesn't demand the glaze, and tasted keen without. If y'all love something extra sweet on your cakes though, I say go for it!
My 7 year old gave this recipe a 10 out of 10. My vi year quondam who ironically doesn't similar pickles gave it an 8.5. And my husband gave it an 8, stating that with a cream cheese glaze, information technology would have been over- the- meridian amazing. Perhaps side by side time, I'll opt for the coat. Either way, this cake is delicious!
